Trinis LOVE food and I don’t mean like the normal liking to eat to stay alive. Our culture is centred around family, friends and food; we love the sight, smell and taste of good food. I even love the sounds of cooking.
We are very lucky to have so many cuisines (Indian, Chinese, African, Spanish, French, Portuguese) influence us and they have all contributed to create our own flavour. Of all my friends on Facebook it’s the Trinis who regularly share food related posts that make me salivate and feel jealous at the same time.
As I was thinking about all this food I remembered that I needed to make some hot pepper sauce (a staple of every Trini’s kitchen) and in keeping with the spirit of Trinidad I’m going to share the flavour.
Pepper Sauce
500g scotch bonnet peppers
2 cloves garlic
330ml white vinegar [Happy Shopper brand (found in your local corner shop) is perfect!]
2 tablespoons tomato puree
1 teaspoon Salt
1 teaspoon Black pepper
Halve the chillies (keep the seeds) and peel the garlic cloves.
Put the vinegar, chillies, garlic, tomato puree, salt and black pepper into a blender and blend until the desired consistency. You may need to add a little more vinegar if it is too thick.
Sterilise your jars before transferring the pepper sauce from the blender to the jar.
Add to your food and enjoy the lip-smackingly good flavour!
